After spending 27 years working with one of the top pizza chains in the world, a friend who suffers, from Celiac disease suggested to me, that I investigate the gluten free industry. My initial thought was ‘No, this is a trend. It will not last’. A year later, to the day, that same friend insisted I at least take a look. I began doing some research regarding Celiac Disease, gluten sensitivity, the limited dining options and the growing demand for gluten free products.

I soon discovered that 1 in every 133 Americans have Celiac Disease. 97% of Americans estimated to have Celiac Disease are not diagnosed. In addition there are 18 million people who suffer from gluten allergies. The number of people who simply choose a gluten free diet grows daily.

Take a look at our logo. The heart illustrates that Gluten Free is a healthier way to eat. The continents represented within the heart illustrate that people world wide are increasingly choosing a gluten free diet. Finally, for those of you who are not versed in Italian, the ribbon represents my Italian heritage and the name Senza Glutine is Italian for Gluten Free.

My mission is to develop a full line of great tasting Gluten Free products which carry the Senza Glutine brand.
